Kalinté, bissara and fish from the port

What people in Tangier really eat.

The story

Kalinté is Tangier's snack: a chickpea-flour flan sold by the slice and sprinkled with cumin. In the morning, look for a bowl of bissara, a broad-bean soup with olive oil. For fish, head towards the port: the day's fried fish, grilled sardines, and everything is shared.
